How to Make Chicken Kali Mirch
Step 1: Marinate the Chicken
- In a bowl, combine chicken with salt, crushed black pepper, lime juice, and yogurt.Mix well so the chicken is evenly coated.
- Cover and let it rest for at least 30 minutes to absorb the flavors.
Step 2: Prepare the Masala Base
- Heat a small amount of oil in a pan.
- Add:
- onions
- garlic
- ginger
- green chilies
- coriander stems
- cashews
- Sauté lightly until fragrant.
- Add green cardamom, mace, and yogurt, then cook briefly.Allow the mixture to cool slightly and blend into a fine, smooth paste.
Step 3: Sauté the Chicken
- In the same pan, add a little oil and butter.
- Add the marinated chicken and sauté for a few minutes until it begins to lightly brown.Remove the chicken and set it aside.
Step 4: Cook the Masala
- In the remaining oil, add whole garam masala spices and the prepared paste.
- Cook the masala for a few minutes, stirring occasionally.
- Add:a little water, salt to taste, freshly ground black pepper, Cook until the masala becomes aromatic and slightly thick.
Step 5: Simmer the Curry
- Return the sautéed chicken to the pan.
- Mix well with the masala and allow it to cook until the chicken becomes tender and fully cooked.
Step 6: Final Flavor Boost
- To finish the dish, add:
- sliced green chilies
- extra black pepper
- roasted cumin powder
- crushed kasuri methi (dried fenugreek leaves)
- Stir gently and simmer for another 2–3 minutes.
