Instructions
- Roast the carrots: In a pan, lightly roast the grated carrots over medium heat for 10 minutes until fragrant and slightly color-changed. Stir continuously to prevent sticking.
- Add condensed milk and milk: Mix in the sweetened condensed milk, then add regular milk. Cover the pan and stir occasionally, scraping the edges. Cook until the milk reduces by half.
- Add ghee: Pour in the ghee and stir well. Reduce heat to low-medium and cook for 30–45 minutes, stirring frequently until all liquid evaporates and the mixture is creamy.
- Add flavor and garnish: Mix in cardamom powder. In a separate pan, roast dry fruits in a little ghee and add them to the halwa.
Tips for Perfect Gajar Halwa
- Use fresh, red carrots for natural sweetness and vibrant color.
- Stir frequently while cooking to prevent milk from sticking to the pan.
- Customize the dry fruits – pistachios, walnuts, or more raisins work beautifully.
Serving Suggestions
- Serve warm Gajar Halwa as a dessert on its own or pair with vanilla ice cream for an indulgent twist. It’s also perfect for festivals like Diwali, Holi, or special family celebrations.
