Preparation
Prepare the Dough
- Start by adding ghee and powdered sugar to a mixing bowl. Whisk or beat them together until the mixture becomes light, creamy, and smooth. This step helps create the soft texture that Nankhatai is known for.
Mix the Dry Ingredients
- In another bowl, combine:
- Maida (all-purpose flour)
- Besan (gram flour)
- Sooji (semolina)
- Cardamom powder
- A pinch of salt
- Mix well so the ingredients are evenly distributed.
Combine Wet and Dry Mixtures
- Gradually add the dry ingredients into the ghee mixture. Mix gently until a soft dough forms. Avoid overmixing, as the cookies should remain delicate and crumbly.
- If the dough feels too dry, you can add 1–2 teaspoons of ghee to bring it together.
Shape the Cookies
- Take small portions of dough and roll them into smooth balls. Slightly flatten them using your palm.
- Place the cookies on a baking tray lined with parchment paper, leaving some space between each cookie.
Add Toppings
- Press almond flakes on top of each cookie for a beautiful and delicious finish.
Bake
- Preheat your oven to 170–180°C (340–350°F).
- Bake the cookies for 15–18 minutes, or until the tops develop their signature cracked texture and the bottoms turn lightly golden.
Cool and Serve
- Let the cookies cool on the tray for about 10 minutes before transferring them to a rack. They will firm up slightly as they cool while remaining soft inside.
