Method
Cook the Pasta
- Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente. Reserve 1 cup of pasta water before draining.
Prepare the Sauce Mixture
- In a bowl, whisk together eggs, egg yolk, and grated Pecorino cheese. Add freshly ground black pepper. Set aside.
Cook the Pancetta
- Heat a skillet over medium heat. Add diced pancetta and crushed garlic. Cook until crisp and golden, about 5–7 minutes. Remove garlic cloves.
Combine Pasta and Pancetta
- Add drained pasta to the skillet. Toss to coat in pancetta fat. Remove from heat.
Add the Egg Mixture
- Pour the egg-cheese mixture over pasta, tossing quickly. Add reserved pasta water gradually to create a silky, creamy sauce.
Serve
- Plate immediately. Garnish with extra grated cheese, black pepper, and optional parsley.
