Crinkle Top Brownies – Eggless

Crinkle Top Brownies – Eggless
Ingredients
Method
- Melt the dark chocolate and butter together until smooth. Set the mixture aside to cool slightly, so it doesn’t heat the milk mixture when you combine them.
- In another bowl, whisk the milk, granulated sugar, brown sugar and vanilla essence for 2–3 minutes. You want it well combined and slightly frothy. This step is what gives the brownies their crinkle top.
- Tip: Don’t rush this step. The better the sugars dissolve, the shinier your top will be.
- Slowly whisk the melted chocolate mixture into the milk and sugar mixture. Pour it in gradually so the batter stays glossy and smooth.
- Sift in the flour, cocoa powder, salt and baking powder. Gently fold until just combined, and stop as soon as you see no dry streaks. Overmixing makes brownies cakey.
- Fold in the chocolate chips if you’re using them.
- Pour the batter into a parchment-lined 7-inch square pan and smooth the top with a spatula.
- Bake at 180°C (350°F) for 25–30 minutes. The edges should be set and the centre slightly soft. Don’t overbake, as the brownies keep firming up as they cool.
- Let the brownies cool completely in the pan before cutting. This helps them hold their shape and gives you clean squares.

Frequently Asked Questions
Why didn’t my brownies get a crinkle top?
The crinkle comes mostly from sugar that has fully dissolved in the milk, so the 2–3 minute whisk matters. Too much flour, too little sugar, or overmixing after the flour goes in can also leave the top dull. Fold only until no dry streaks remain. Use real dark chocolate rather than compound chocolate, and make sure the chocolate mixture has cooled slightly before you whisk it in.
Why are my brownies dry or cakey?
This usually means they were overbaked or overmixed. In this recipe the centre should still look slightly soft when you take the pan out of the oven, because the brownies keep setting as they cool. Start checking at 25 minutes. If you only have a larger pan, the batter spreads thinner and bakes faster, so check even earlier.
Can I skip the chocolate chips?
Yes, they’re optional. The 150 g of dark chocolate already gives plenty of flavour and fudginess. The chips add melty pockets and a little extra texture, so use them if you like them and leave them out if you don’t.
Why do I need to wait for the brownies to cool before cutting?
Eggless brownies are very soft while warm and fall apart if cut too soon. Cooling completely in the pan lets the centre set so you get neat squares. For the cleanest edges, run a sharp knife under hot water, wipe it dry, and slice. Wipe the knife between cuts.
How do I store these brownies, and can I freeze them?
Once fully cooled, keep them in an airtight container at room temperature for 3–4 days, or in the fridge for up to a week. Fridge brownies turn firm, so 10–15 seconds in the microwave brings back that fudgy texture. To freeze, wrap them tightly, either as a whole slab or in individual squares, and keep them for up to 3 months. Thaw at room temperature, or warm briefly in the microwave. Lazy Fusion brownies are best eaten within a few days, but they hold up well in the freezer.
What does the milk do in an eggless brownie?
With no eggs, the milk is the liquid that dissolves the sugars. Whisking them together creates the frothy base that helps form the shiny top. It also keeps the batter smooth when you add the melted chocolate and butter. Use the 60 ml (¼ cup) as written, since extra liquid would make the brownies gummy.
