Crinkle Top Brownies

Crinkle Top Brownies – Eggless

If you want a brownie that looks as good as it tastes, this is the one. These eggless brownies are rich, fudgy and deeply chocolatey, with a thin, shiny, crackly top that breaks when you bite into it. They’re what I make when a chocolate craving hits and there are no eggs in the kitchen. What really makes this recipe work is the base. Whisking the milk with both sugars until slightly frothy helps the sugar dissolve, and that’s what gives you the glossy crinkle on top. Melted dark chocolate and butter bring the fudgy centre, and a gentle fold of flour keeps everything soft. It’s a simple recipe with pantry ingredients and no fancy equipment, which makes it a good choice for beginners. Bake it for a weekend treat, a family get-together, or a last-minute dessert.

For the Chocolate Base
  • 150 g dark chocolate

Method

Method
    Melt the Chocolate
    1. Melt the dark chocolate and butter together until smooth. Set the mixture aside to cool slightly, so it doesn’t heat the milk mixture when you combine them.
    Whisk the Milk and Sugars
    1. In another bowl, whisk the milk, granulated sugar, brown sugar and vanilla essence for 2–3 minutes. You want it well combined and slightly frothy. This step is what gives the brownies their crinkle top.
    2. Tip: Don’t rush this step. The better the sugars dissolve, the shinier your top will be.
    Combine the Batter
    1. Slowly whisk the melted chocolate mixture into the milk and sugar mixture. Pour it in gradually so the batter stays glossy and smooth.
    2. Sift in the flour, cocoa powder, salt and baking powder. Gently fold until just combined, and stop as soon as you see no dry streaks. Overmixing makes brownies cakey.
    3. Fold in the chocolate chips if you’re using them.
    Bake
    1. Pour the batter into a parchment-lined 7-inch square pan and smooth the top with a spatula.
    2. Bake at 180°C (350°F) for 25–30 minutes. The edges should be set and the centre slightly soft. Don’t overbake, as the brownies keep firming up as they cool.
    Cool and Cut
    1. Let the brownies cool completely in the pan before cutting. This helps them hold their shape and gives you clean squares.

    Notes

    Final Result
You’ll get dense, fudgy brownies with chewy edges, a soft centre and a thin, crackly top. They’re rich without being heavy, and they’re good warm with a scoop of vanilla ice cream or cold with a glass of milk.
Tip: whisk the milk and sugars really well, and take the brownies out while the centre is still slightly soft.
Save this for your next chocolate craving.
