Vermicelli Upma

This homemade vermicelli upma is the kind of simple, comforting dish that never fails to bring warmth to the table. Light, fluffy, and gently spiced, it’s made with roasted vermicelli cooked in a fragrant South Indian-style tempering and mixed with fresh vegetables for added texture, color, and nutrition. What I love most about this recipe is how effortlessly it comes together using everyday pantry ingredients. The vermicelli is first dry roasted until it turns golden and aromatic, which is the secret step that prevents stickiness and gives the dish its signature nutty flavor. Then it is cooked with a traditional tempering of mustard seeds, cumin, chana dal, urad dal, curry leaves, green chilies, and ginger — each ingredient building layers of flavor in the simplest way possible. Fresh vegetables like carrots, beans, peas, and capsicum are added to make it more wholesome and balanced. They cook just enough to stay slightly crisp, adding a beautiful contrast to the soft vermicelli. A touch of turmeric gives a warm golden color, while a squeeze of lemon at the end brightens everything and ties the flavors together beautifully. This dish is not just quick and easy, it’s also incredibly versatile. It works perfectly as a light breakfast, a comforting evening meal, or even a quick lunch when you don’t feel like spending too much time in the kitchen. You can easily customize it with your favorite vegetables or adjust the spice level to suit your taste. For me, vermicelli upma is more than just a recipe — it’s a reminder that simple food can still be deeply satisfying. It’s warm, nourishing, and made with love, and that’s exactly what makes it a timeless comfort dish in so many homes.

  • 1- inch ginger grated
  • Few curry leaves
  • ½ onion finely chopped
  • 2 tbsp carrot finely chopped
  • 2 tbsp green beans chopped
  • 2 tbsp green peas
  • 2 tbsp capsicum chopped
  • 1 tsp salt adjust to taste
  • ½ tsp turmeric powder
  • cups water
  • ½ lemon juiced
  • 2 tbsp fresh coriander leaves chopped

Method

Preparation
    Roast the Vermicelli
    1. Begin by dry roasting 1 cup of vermicelli in a wide pan over low heat. Stir continuously to ensure even roasting and prevent burning. In about 3–4 minutes, the vermicelli will turn light golden and release a nutty aroma. Even if using pre-roasted vermicelli, this step helps remove excess moisture and ensures a non-sticky, fluffy texture. Once done, transfer to a plate and set aside.
    Prepare the Tempering
    1. In the same pan, heat 2 tablespoons of oil over medium heat. Add mustard seeds and allow them to crackle. Then add cumin seeds, chana dal, urad dal, and a pinch of hing. Stir continuously until the dals turn golden brown, forming a rich and aromatic base.
    Fry the Nuts
    1. Add peanuts and cashews and stir-fry until lightly golden and crunchy. This adds a delicious texture contrast to the soft vermicelli.
    Sauté Aromatics
    1. Add slit green chilies, grated ginger, and curry leaves. Sauté for about 30 seconds until fragrant and aromatic, forming the signature flavor base of the dish.
    Cook the Vegetables
    1. Add finely chopped onions and sauté until soft and translucent. Then add carrots, beans, peas, and capsicum. Add salt and turmeric, mix well, and cook for 2–3 minutes until the vegetables are tender but still slightly crisp.
    Simmer the Upma
    1. Pour in 1½ cups of water and stir well. Bring to a gentle boil, then add the roasted vermicelli. Mix everything evenly, reduce the heat to low, cover, and cook for 8–10 minutes until the vermicelli absorbs all the water and becomes soft.
    Finish and Serve
    1. Once cooked, turn off the heat. Add lemon juice and chopped coriander leaves. Gently fluff the upma to separate the strands and serve hot.
    Tips and Tricks
    1. Always roast vermicelli on low heat until light golden to prevent stickiness and enhance flavor.
    2. Cut vegetables into small, even pieces for uniform cooking and better texture.
    3. Maintain proper water ratio to avoid soggy or undercooked upma.
    4. Cook vegetables until slightly crisp to retain freshness and bite.
    5. Prepare tempering on medium heat to avoid burning spices and preserve aroma.
    6. Add lemon juice only at the end for a fresh, bright flavor.
    7. Let the upma rest for a minute before fluffing for a lighter texture.
    8. Serve immediately, as vermicelli upma tastes best when hot and fresh.
