Roast the Vermicelli
- Begin by dry roasting 1 cup of vermicelli in a wide pan over low heat. Stir continuously to ensure even roasting and prevent burning. In about 3–4 minutes, the vermicelli will turn light golden and release a nutty aroma. Even if using pre-roasted vermicelli, this step helps remove excess moisture and ensures a non-sticky, fluffy texture. Once done, transfer to a plate and set aside.
Prepare the Tempering
- In the same pan, heat 2 tablespoons of oil over medium heat. Add mustard seeds and allow them to crackle. Then add cumin seeds, chana dal, urad dal, and a pinch of hing. Stir continuously until the dals turn golden brown, forming a rich and aromatic base.
Fry the Nuts
- Add peanuts and cashews and stir-fry until lightly golden and crunchy. This adds a delicious texture contrast to the soft vermicelli.
Sauté Aromatics
- Add slit green chilies, grated ginger, and curry leaves. Sauté for about 30 seconds until fragrant and aromatic, forming the signature flavor base of the dish.
Cook the Vegetables
- Add finely chopped onions and sauté until soft and translucent. Then add carrots, beans, peas, and capsicum. Add salt and turmeric, mix well, and cook for 2–3 minutes until the vegetables are tender but still slightly crisp.
Simmer the Upma
- Pour in 1½ cups of water and stir well. Bring to a gentle boil, then add the roasted vermicelli. Mix everything evenly, reduce the heat to low, cover, and cook for 8–10 minutes until the vermicelli absorbs all the water and becomes soft.
Finish and Serve
- Once cooked, turn off the heat. Add lemon juice and chopped coriander leaves. Gently fluff the upma to separate the strands and serve hot.
